*ingredients:

•3 lbs roast chuck, cut at the shoulder

° food salt also black pepper to taste

° 2 tsp of olive oil

° 1 chop onion

3 garlic cloves, crush or press

° 1 t of tomato paste

° 2 tasp all-purpose flour and cassava flour

•1/2 c red wine

•2 cups beef broth

•2 lbs small yellow potatoes

•1 pound carrots, chopped

•2 bay leaves

° fresh parsley or cilantro

° fresh thyme
