Mango Cheesecake
Ingredients:
β 2 cups graham cracker crumbs
β 1/2 cup unsalted butter, melted
β 4 ripe mangoes, peeled and diced
β 3 tablespoons sugar
β 32 ounces cream cheese, softened
β 1 cup granulated sugar
β 1 teaspoon vanilla extract
β 4 large eggs
β 1/2 cup all-purpose flour
β 1/2 cup mango puree
β Mango slices and mint leaves for garnish (optional)
Directions:
1. Preheat the oven to 325Β°F (163Β°C) and grease a 9-inch springform pan.
2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
3. In a blender, puree diced mangoes with 3 tablespoons of sugar until smooth.
4. In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until creamy.
