How to Make Cranberry Bread
Preheat oven to 350 degrees F and thoroughly grease 2 baking sheets (can also be made as a very large loaf or in a 9-inch cake pan).
In a large bowl, add the eggs and sugar and beat for 5 minutes, or until the mixture has almost doubled in volume (donโ€™t skip this step!).
Mix butter, vanilla and almond extract until smooth.
Gently mix the flour, baking powder and salt until well combined, then add the cranberries.
Transfer the batter to the prepared pans.
In a small bowl, mix all the filling ingredients until you have a sandy consistency. Sprinkle on the breads.
Bake for 45 to 50 minutes for 2 loaves or 60 to 70 minutes for 1 large loaf. Cook until a toothpick inserted comes out clean.
Let the sandwiches cool before slicing.
